The Union
Project overview
The building, which housed a long-time Helena restaurant for over forty years, is the latest expansion of Old Salt Co-op. The goal was to transform a popular Helena hangout into an entirely new upscale retail and dining experience for customers.
Process
Due to the age and complexity of the building, early collaboration between the owner, architect, engineers, and contractors was essential. Identifying potential plumbing, lighting, and structural concerns early on ensured the project would not only satisfy the client’s needs but solidify this building as a downtown Helena staple for years to come.
Existing archival drawings and photographs became very important in understanding the layout of this historic building and the additions and modifications made over the years.
A significant expansion of the existing kitchen area provided adequate space to serve both the new restaurant and the new integrated butcher shop including a walk-in cooler and solid fuel grill.
The initial demo work revealed original timber roof beams and wood flooring which were highlighted in the final design.
The removal of a few existing walls significantly increased the amount of natural light reaching the new butcher shop and new dining room areas.
Interior stonework and butcher block tables helped bring the Old Salt Co-op ranching lifestyle and imagery to downtown Helena.
Outcome
Main Level:
The Union is a beautifully restored historic restaurant with ties to Montana families and ranches. The unique yet inviting interiors include a butcher area that provides fresh-cut meat, and a custom deli case that provides fresh deli food, meat, and vegetables. A large wood-fire grill lined with herringbone fire brick is centrally located in the restaurant so customers can observe their meals being cooked. The reupholstered booths, restored bar, new flooring, tile walls, and lighting transformed the space into the downtown gem it’s become. A restored vintage wood refrigerator is one of the main focal points of the bar area. New fixtures, stalls, flooring, paint, wallcovering, lighting, and mirrors provide clean ADA-accessible spaces for guests. Custom firewood storage crates can be seen tucked into numerous areas of the restaurant.
Mezzanine:
The existing wood flooring on the Mezzanine level was a pleasant surprise preserved by the owners and the contractor during the demolition phase. Having been covered by many layers of other floorings, it is now restored to its stunning original form. Removal of the existing ceiling exposed the historic timber trusses and roof structure, enhancing the interior volume of the dining room and bar. The newly refreshed Mezzanine has wonderful views of downtown and into the restaurant below.
The resulting project not only revitalized a beloved historic building but also provided downtown Helena with a unique dining and culinary shopping experience.
